Instructions:


In a large heavy-bottomed pan or kadhai, heat ghee on medium heat.
Add grated carrots to the pan and sauté for 15-20 minutes, stirring occasionally.
Add milk to the pan and stir well.
Cook the mixture for 1.5-2 hours on medium heat, stirring frequently to prevent the mixture from sticking to the bottom of the pan.
Add sugar to the pan and mix well. Continue cooking until the sugar has dissolved and the mixture has thickened.
Add cardamom powder and chopped nuts to the pan and mix well.
Cook for an additional 20-30 minutes until the halwa has reached the desired consistency and the carrots are fully cooked.
Serve hot or cold, garnished with additional nuts if desired.
Note: This recipe makes a large quantity of gajar ka halwa and can be used for parties or occasions where you need to serve many people.
