 Pulav, also known as pilaf, is a rice-based dish that is popular in many parts of the world, including India, the Middle East, and Central Asia. It is typically made by cooking rice with a variety of spices, vegetables, and sometimes meat or seafood.

Ingredients:


1 cup basmati rice

2 cups water

2 tablespoons oil or ghee

1 onion, chopped

1 green chili, chopped (optional)

1 tablespoon ginger-garlic paste


1 teaspoon cumin seeds

1 bay leaf

2 cloves

2 cardamom pods

1 cinnamon stick

1 teaspoon salt (or to taste)

1 cup of various vegetables (such as peas, carrots, beans, and potatoes)

Fresh cilantro, chopped (optional)


Instructions:

  • When rinsing the rice in cold water, make sure the water is flowing freely. Water should be let to soak the rice for 30 minutes.


  • In a large saucepan, heat the oil or ghee over medium heat. Add the cumin seeds, bay leaf, cloves, cardamom pods, and cinnamon stick and fry for a few seconds until fragrant.


  • Add the chopped onion and green chili (if using) and sauté for a few minutes until the onion is soft and golden brown.




  • Add the mixed vegetables and sauté for a few minutes until they are slightly softened.


  • Drain the rice and add it to the saucepan, stirring gently to combine.




  • Simmer the rice for 15-20 minutes, or until it is soft and the water has been absorbed, on low heat with a tight-fitting lid on the pan.




  • Fluff the rice with a fork, garnish with fresh cilantro (if using), and serve hot.
