Puri - Chole
Puri Chole is a popular Indian vegetarian dish that consists of deep-fried flatbreads (puri) served with a spicy and tangy chickpea curry (chole). The puri is made from whole wheat flour and is usually small and crispy. The chole, also known as chana masala, is made with chickpeas that have been cooked in a flavorful tomato-based gravy that is spiced with a blend of aromatic Indian spices such as cumin, coriander, and garam masala. Puri chole is a popular breakfast or brunch dish in many parts of India, but it can also be enjoyed as a main meal or as a street food snack.
Ingredients for Chole:
1 cup chickpeas (kabuli chana)
2 tbsp oil
1 bay leaf
1 cinnamon stick
2-3 green cardamom pods
1 black cardamom pod
1 tsp cumin seeds
1 onion, finely chopped
1 tbsp ginger-garlic paste
1 tsp red chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
2 tomatoes, finely chopped
Salt, to taste
1 tbsp chana masala powder
Water, as required
Ingredients for Puri:
2 cups whole wheat flour
1/2 tsp salt
1 tsp oil
Water, as required
Oil, for deep frying
Instructions:
Soak the chickpeas overnight in enough water to cover them completely. Drain and rinse the chickpeas earlier than cooking.
Heat oil in a pressure cooker over medium heat. Add bay leaf, cinnamon stick, green cardamom pods, black cardamom pod, and cumin seeds. Sauté until fragrant.
Add chopped onion and sauté until onion turns into translucent. Add ginger-garlic paste and sauté for another minute.
Add red chilli powder, coriander powder, turmeric powder, and chopped tomatoes. Mix well and cook until the tomatoes become soft and pulpy.
Add the soaked chickpeas, salt, chana masala powder, and enough water to cover the chickpeas. Mix well and pressure cook for 15-20 minutes, or until the chickpeas are soft and fully cooked.
Once the pressure cooker is cooled down, open it and check the consistency of the chole. If it is too thick, add some more water and adjust the seasoning to taste. Cook for another 5-10 minutes on medium heat.
To make the puri, combine whole wheat flour, salt, and oil in a bowl. Mix well and add water gradually to make a stiff dough.
Divide the dough into small equal-sized balls. Roll each ball into a small disc of about 3-4 inches in diameter.
Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully slide in the rolled out puri and deep fry until they are puffed and golden brown on both sides. Drain on a paper towel to cast off excess oil
Serve hot puri with the chole and enjoy your delicious Puri Chole!
Note: You can also add some chopped coriander leaves and lemon juice to the chole before serving for some extra flavor.
