1 teaspoon red chili powder

1 teaspoon cumin powder

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

Salt to taste

3 cups water

Few saffron strands (optional)

1/4 cup milk (optional)

1/4 cup chopped coriander leaves

1/4 cup mint leaves

For the biryani masala:


2-3 green cardamoms

2-3 cloves

1-inch cinnamon stick

1 bay leaf

1 teaspoon cumin seeds

Instructions:


Rinse the basmati rice in water and soak it for 30 minutes.


In a pan, heat oil or ghee and fry the onions till they turn golden brown. Add ginger-garlic paste and green chilies and sauté for a few seconds.


Add mixed vegetables and sauté for 5-7 minutes. Then add the red chili powder, cumin powder, coriander powder, turmeric powder, and salt. Mix well and cook for a few minutes.


Drain the soaked rice and add it to the pan. Mix well and sauté for 2-3 minutes.


Add 3 cups of water and mix well. Bring it to a boil and then reduce the heat to low. Cover the pan with a lid and cook for 10-12 minutes until the rice is cooked and the water is absorbed.


While the rice is cooking, prepare the biryani masala. In a small pan, dry roast the cardamom, cloves, cinnamon, and bay leaf for a minute. Then add cumin seeds and roast for another minute. Remove from heat and crush the spices in a mortar and pestle or a spice grinder.


If using saffron, soak it in warm milk for 10-15 minutes.


Once the rice is cooked, remove the pan from heat and let it rest for 5 minutes. Then fluff the rice with a fork.


Layer the rice and vegetable mixture in a serving dish. Sprinkle the biryani masala, chopped coriander leaves, and mint leaves on top.


If using saffron, pour the saffron milk over the rice.


Cover the dish with a lid or foil and let it rest for 10-15 minutes to allow the flavors to blend.


Your vegetable biryani is ready to be served!
